Foil Pack Grilling #1

I originally heard of foil packet grilling on Pinterest. I thought how convenient and the flavors intermingling hmmm gotta try it! So we did.  Here is our first attempt:

Ingredients used:

Small round potatoes

Sweet potato

Sausage (we used German sausage since it was on sale, ideally use chorizo)

Red and Yellow Peppers

How-To:

Cut up all the ingredients into bite-sized pieces. Throw in a bowl and season as you like. We kept it simple with olive oil, salt, and pepper. Since we had a large amount I ended up using a foil pan. For a smaller portion cut a piece of foil and put ingredients in middle. Add a tad bit of water to help steam cook. And roll into a little pouch. For our foil pan we just covered with foil. Throw it onto the grill for 30 – 45 minutes.

Alberta Floods

It's been a sad weekend in my beloved city of Calgary and areas around. We have been in a state of emergency since Thursday. Unprecedented amounts of rain flooded our rivers and flooded our town. I have lived here almost all my life and never seen this. I'm a lucky one. My house, my family are fine. Seeing things first hand are heart breaking. Knowing that I walked those streets and parks days before and they were washed away.

Amidst all the destruction Calgary prevails. This city has shown what it is built with. Hearts are open. We have one of the best mayors, Mayor Naheed Nenshi. He has been in the thick of it 24/7 and has been very motivating. Today the city asked for 600 volunteers, Calgary pulled through and THOUSANDS showed up. There are donation requests all over town. I went to the store and got a cart full of items to donate. It doesn't feel like enough but its my way of helping anyway i can. I have also contacted my brides getting married shortly and made sure their families were okay and how I can help if needed. This has touched us all in some way. I ask you to please help donate what you can...every little bit helps! #Calgarystrong

Review: Garlic & Herb Marinade

There are some days you get home and simple is the way to go. It’s nice to have things on hand that can help you quickly make dinner so you don’t resort to eating out or unhealthy. We tried this marinade for the first time. It’s available from Sobey’s and was on sale for $1.99. We took some fresh chicken breast and marinated it with this for about 30 minutes before grilling. The chicken was nice and juicy with just enough flavor from the marinade. I unfortunately don’t have a picture of the finished meal but we served it with garlic bread and corn on the cob (my summer staple!).

Our 1st BBQ of 2013

Now that we have our new grill, we were dying to try it out. Of course with our luck it rained for a week straight after getting it. But the clouds broke up a little today so we took our chances. It will take awhile to get used to the amount of charcoal to use and cooking time but the meal was delicious.

In the foil pan, we have small round potatoes seasoned with olive oil, salt and pepper. Potatoes take longest to cook so smaller pieces seem to fare better. The pork tenderloin chops were seasoned with margarine, salt, and pepper and grilled perfectly by Steve. And for vegetable we used asparagus which was marinated in olive oil, sea salt, and balsamic vinegar before grilling. Who knew I could like vegetables this much?!

Looking forward to a great grilling season!!

Introducing Webster....

Last year we bought our first BBQ together and while we have great memories of using it, it didn’t fair well in a windstorm we had. I came home twice to our barbecue across the deck and flat out. The handle was broken which we got replaced and then second time got broken again and the back hinges snapped off too. Just wasn’t meant to be. We knew we’d have to buy a new one this spring and hated having to have the cost of a new one so soon. Steve had been trying to convince me to get a charcoal grill since the previous year but I thought they were too inconvenient. But he got me on a weak day and I agreed to look at them with him. Afterall, what are we always rushing for anyways??

We went to Home Depot but they only had a picture of the one we wanted and were out of stock. Then I remembered I had a gift certificate to Rona to use so we decided to try there the following week. At the same time I thought about selling the broken BBQ on Kijiji for someone looking to fix it or use for parts and it sold within 24 hours! Double bonus we didn’t have to go to the dump! So we took those proceeds too and bought our new charcoal grill.....

Ain’t he handsome?! We decided to name it Webster...because we’re cool like that. So now the adventures of summer grilling start! Wish us luck J
