VEGAS!!

We're back from a FANTASTIC trip to Las Vegas!  It' not our first time there but we love it every time.  Good drinks, food, shopping, shows....what more could we want?!  Here are some photos to share with you.....

Vegas, Here We Come!

 
This is it!  After waiting a few months for the vacation we had booked....it's finally here!  Me and Steve fell in love with Vegas so we are going back again and can't wait to leave this weekend.  We'll be there for 5 glorious days and are so excited we haven't slept well in a week lol.  They are forecasting the temperatures to be around 34 which is freakin' fantastic!


I'm a lucky woman that Steve loves to shop like I do so that will be alot of what we do and we hope to catch a couple shows too.  Last year we stayed at New York New York Hotel which was beautiful and on the south end of the strip.  We decided we wanted to be more central this time so we booked at Bally's.  This is going to be fun!!!

Carrot Cake Pops




Who doesn't love this cake pop trend?!  It's like the perfect bite of heaven....
I decided to make some carrot-shapped cake pops in carrot cake flavor (oh the irony!) for a past dinner at my boyfriend's parents house.  They were all thrilled to see them.  We joked that they had no calories as they were technically vegetables......okay maybe a stretch but I did keep it as low fat as possible!

How-To:

Bake a normal cake box mix, I used Betty Crocker Carrot Cake.  Once cool, crumble up the cake (this one hurts a little to watch lol).  Then add 2/3 of a can of frosting, again you can use any flavor but I used Betty Crocker Cream Cheese Frosting.


Next, you'll need to take a spoonful of the mixture and shape into a small carrot.  Put them on a cookie sheet covered with wax paper.  Mine were a bit too big so i'd keep them smaller next time.  Once you are done with all the mixture, throw the cookie sheet into the fridge for about an hour. 


I used some green melting chocolate for the next part.  I took the pop sticks (fnd at Michaels or use something similar) and dipped them in the melted chocolate then push through the center of the "carrot".  There will be some green that puddles at the top which is perfect to look like the stem of a carrot.  I like to throw them back in the fridge for an hour again so they attach well to the stick.

I then used orange melting chocolate for the last part.  Once its melted, dip each carrot up until the green.  Shake off excess chocolate and then lay on cookie sheet to let dry.


They were a hit!

Trip to Kananaskis

Last week I had a 2-day trip to Kananaskis and had the pleasure of staying at the Delta Kananaskis.  The trip was primarily for a wedding client who got married there but I snuck in a bit of relaxing too.  I was surprised to not see more snow around but the temperature was nice outside that day.  There was still plenty of snow in the mountains for skiing though which we saw many out at Nakiska.  The Delta Lodge at Kananaskis is tucked away in the mountains and very secluded.  We did sneak away into the town of Canmore for some window shopping though :)  Here are a few pictures from the trip.  The mountains are always breaktaking to look at and i'm grateful to be able to appreciate them.

This was in the banquet room that the wedding reception was held in.  See out the windows? You're literally nestled in nature.  The table was being set for the wedding cake.


Here is a shot of the wedding reception all set up :) At night we had LED lights around the room and in the centerpiece for a night club glow.

Easter Eggs

When I was growing up, my mom had me paint Easter eggs as a tradition.  We'd get to draw anything we want on them.  I wanted to continue this tradition in our household now and so last Friday we made an afternoon of it.  We invited over one of the girls' cousins to join in the fun.  I pre-dyed the eggs for them so they were ready to go and then let them loose with some markers.  They were very proud of their creations :)

(After hard boiling eggs, I added 1 cup hot water with 1 tbsp vinegar and some food coloring to each bowl.  Let the eggs stay in until desired tone.  Longer you leave in, the more vibrant the color will be.)

Easter Cupcake Baskets

What a FANTASTIC Easter weekend!  From start to finish it was truly great and i'm blessed to have shared it with my family.  There were lots of baking and crafts which added to our fun into between special dinners.  Here are the cupcakes I made for my family Easter dinner at my sister's house.  They are gluten-free chocolate cupcakes with lemon vanilla icing :)

Happy Easter!

Easter is definitely my favorite holiday!  I know most people love Christmas but I have always loved Easter.  It happens to be in Spring which is all about rebirth and I love to wait for trees to bloom.  We have a busy weekend planned with TWO easter dinners.  I have desserts planned to bring to both that I will share with you next week.  I also have some easter coloring pages for us to do in our down time at night.  I promised that we are going to color some easter eggs as per tradition too.  Here are a few of this weekend's to-dos:
