My Favorite Flowers

I heart DAFFODILS!!!
Of all the flowers out there, daffodils are my most favorite...with hydrangeas a close second.  Roses are just to common for me.  My poor boyfriend went out one day on a hunt for daffodils sometime in the fall when we first started dating not knowing they were a seasonal springtime flower.  Made it all more sweet for his effort.  Every Spring, I make sure I pick up a bunch to have in the house when they are available in the supermarket.  They just brighten up the house and such a nice treat to come home to!

'Thank You' Display

Over the years I have received beautiful thank you cards and pictures from wedding that I provide services for.  It is always touching when I see one in the mail and reminds me why I love my job.  I wanted to display them in my office to inspire me on a daily basis.

I had a magnetic board around the house in my "find something to with it eventually" pile (be honest, we all have one!).  I hung the magentic board above my desk and used the magnets to put a few cards and photos on it.  Then I took some strong cord from the garage and hot glued from one side to the other, so I could hang additional cards from it.  It just made it look fun :)

Recipe: Spinach Balls


I originally made this recipe as an appetizer for our open house awhile back and they were a nice addition to our spread.  They were easy to make and everyone seemed to like them.  I originally found the recipe here.

Ingredients:
  • 1 pkg. Lower Sodium Stuffing Mix (i prefer Stove Top for Chicken)
  • 1 cup hot water
  • 1/4 cup margarine
  • 2 pkg. (300g each) frozen chopped spinach, thawed, well drained and squeezed dry
  • 1 cup finely chopped fresh mushrooms
  • 3/4 cup finely chopped onions
  • 1/2 cup Parmesan Light Grated Cheese
  • 3 eggs

How-To:
  1. Heat oven to 400F.
  2. Mix stuffing mix, hot water and margarine in large bowl until well blended.
  3. Add remaining ingredients, mix lightly. 
  4. Shape into 24 - 2" balls and place on greased pans or cookie sheets.
  5. Bake 25-30 minutes.

My Ring Box

Every woman likes some jewelry, no?  It happens to be one of my (many) healthy obsessions.  I love to shop but being at a not ideal weight right now (work in progress), it can be depressing when you get into a change room and find the outfit doesn't fit you.  But things like shoes and jewelry always fit so they are my retail therapy. 

I have two large jewelry organizers (here comes my OCD).  And I make sure that everyday I have a little something on different from the day before so everything gets use.  I feel more polished when I have a piece of jewelry on.  It takes any outfit and "kicks it up a notch."

Today, i'm sharing with you my ring collection.  I love having a ring on.  And whilst I don't have an engagement ring yet, I always wear one on my other hand.  I purchased my ring box from Regal Gifts about a year ago and I love it.  Instead of them all being trown together in a box, they are neatly spread out so I can see all of them at once which makes remembering what I have also easier!  And for those wondering, yes that's 47 rings in total.

8 Hours of Love Notes

It's the little things.  Really, it is.  I believe that it's not about your partner spending lots of money or buying you lavish things (although those are lovely to receive!).  I believe it's in the little things that shows they love you and keeps the romance alive.  Everyone once in awhile I like to do different things as small as a little doodle on a piece of paper for my partner to find.  Just remind him I love him!

The other day I wanted to do something extra special though as he had been having a rough time at work one week.  I thought it would be lovely for him to have little notes throughout the day to kind of get him through the day.


Here's what I did....

  1. I printed off 8 cute cartoons from the internet.  Some just said i love him, others a cute joke, and others a bit more risque.
  2. I added little captions and footnotes by hand to personalize them.
  3. Then I put each in their own envelope and marked them with what time he had to open that exact envelope (8am, 9am, etc etc).
  4. Then I tied them up with a ribbon.
I left the package by the coffee maker so I knew he would see it and left a note explaining he had to open each envelope only at the given time.

That day, every hour I got a cute message from him pertaining to what he had just opened.  He really liked the idea and it was exciting anticpating the next one, and the next one...

Recipe: Southwest Bean Skillet

I found this recipe on Pinterest of course last week and was determined to put my spin on it for a dinner this week.  What I loved most of it was how colorful it looked.  I changed a few things from the original recipe which you can find here.

Ingredients:

1 can corn (or 1 cup frozen)
2 tbsp fresh chopped cilantro
1/2 tsp chili powder
1/2 tsp salt
1 small green pepper, chopped
1 small onion, chopped
1 can chili bean in sauce, undrained
1 can black beans, rinsed and drained
1 cup shredded cheese
2 medium tomatoes, chopped
1lb. ground beef

How-To:
  1. Brown ground beef in skillet with chili powder.  Set aside.
  2. In large skillet, add remaining ingredient except for tomatoes and cheese.  Heat to boil then reduct heat.  Cover and simmer 5 minutes.
  3. Uncover and simmer additional 5-10 minutes.  Add ground beef and mix together.
  4. Stir in cheese and tomatoes until cheese is melted.
  5. Serve with taco chips on side if desired :)

Winter Storm...again

Not so appealing.  Don't worry, neither are my car.  I much rather have this as my view...


I have lived in Calgary for most my life but have never and will never gotten used to the weather.  I blame this partly on my parents for raising me in the beautiful island of Terceira in Azores, Portugal.  I have tropical in me!  I love everything about Spring and Summer.  Can't wait for it to start and bring out the lighter wardrobe.  Hopefully this is the last winter storm of the year....but if you know Calgary, then you know it probably ain't! :) Keep smiling!

Smores Sticks


This is a fun and quick treat for a dessert table or even for those of us without a fireplace or firepit to make real smores on!  Sooo easy too :)

What You'll Need:
  • Marshmallows (the big ones)
  • Chocolate for melting
  • Graham Cracker Crumbs
  • Sticks (you can use straws probably too)
How To:
  1. Push one stick down the center of each marshmallow, flat side down.
  2. Dip the marshmallow in the melted chocolate half way down the marshmallow.
  3. Then dip the marshmallow (before the chocolate starts to harden) into the crumbs.
  4. Set on a plate and let dry!
Now wasn't that easy like I said?!  You can fancy them by adding ribbon or cards to the top.  For an alternative you could also do sprinkles instead of crumbs which is festive for birthdays :)
