Holiday Open House

For the second year in a row we have held a Holiday Open House for our closest family and friends.  It's a good way to get to see everyone during the holidays.  For the week leading I am a baking machine so that we can put a nice spread out.  Here are some pictures from this year as well as some better decor pictures than my previous post.  I will be posting recipes for everything in the coming weeks as well :)

It's Beginning To Look A Lot Like Christmas.........

Christmas is upon us!  I decorated the house a couple weeks ago but took awhile to get some pictures as daylight seems scarse these days.  I leave for work in the dark and by the time I get home we have to put lights on already!  Here are the first pictures.  I'm going to try and get some better ones this weekend as we hold our annual holiday open house.  There's lost of treats to be made and house cleaning to do until then!  And I WILL get better pictures....promise!

Christmas Wish List

FA LA LA LA LA! Is everyone else getting into the Christmas spirit yet?  I made a promise to myself to have all my shopping done by Dec. 1 this year and I was successful...even a few days early!  Now I can relax, bake goodies, and wait to see what i'll get for Christmas.  Here are some of my wish list items:

Cookie Exchange Party

'Tis the season! A good friend of mine invited me to her annual Christmas Cookie Exchange Party.  There were 10 of this who agreed to partake this year....which means each of us had to bake 10 dozen cookies (a dozen for ourselves and a dozen for eachother).  Last year I made Lemon Cookies which were a hit and wanting to do something different this year I went with Penuche Glazed Pumpkin Cookies.  It was a great way to use up the rest of my pumpkin puree!

Pumpkin Cookies
  • 1 box spice cake mix (butter pecan also works)
  • 1 3/4 cups pumpkin
Mix together and drop spoonfuls on greased cookie sheets.  Bake at 350F for 15-20 minutes.



    Penuche Glaze

  • 3 tbsp butter
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1 1/2 cups icing sugar
In small saucepan, melt butter together with brown sugar until creamy on med-low heat.  Beat in milk.  Add icing sugar stirring constantly.  At this point, you MUST keep stirring and keep the glaze on heat or it will harden INSTANTLY!  Glaze cookies with silicon brush :)

For packaging the cookies, I used paper bags this year to go with my decorating theme.  I punched holes in both corners of the bag when tops folded and tied close with yarn.  Then I added these cute tags I found at Ikea and wrote the name of the cookies on the back.  I added the felt roses which I made last minute to be cute (tutorial can be found in post from last year).

Best Pumpkin Layer Cake




The baking continues in my house with all things pumpkin.  Steve overheard me say that I make a really good pumpkin layer cake and was not to pleased I had never made it for him in our 3 years together....hey, a girl has to keep some things secret!  So I decided to make it this past weekend and he has devoured every last bite and proclaimed it his favorite thing i've ever baked.  The original recipe can be found here.  It's not difficult but makes an impressive plate!

Best Hot Chocolate EVER!

Okay, forget the muffins.....  I was craving a hot chocolate with a kick the other day and Steve brings me this.....
Before I go on to the gloriousness that was my hot chocolate, enjoy my cool new mugs!  We just perfected our own hot toddy recipe (will share later) and I said we had to get proper clear mugs for them.  We bought these over the weekend at Dollarama and thought it was too cute not to use more often too.

Back to the hot chocolate....

Take 2 heaping teaspoons of hot chocolate mix (we used generic Walmart brand), mix with hot water and add 1/2 oz of Kahlua (now that's what i'm talking about!).  For the frothy milk, Steve uses and old fashioned hand milk frother that works brilliant for our cappucinos too.  Then sprinklw with cocoa/cinnamon mix and you're good to go!

Easiest Chocolate Chip Muffins EVER!

Since making my Halloween pumpkin into a puree a few weeks back, I have been using it in so many different recipes and they are all sooooo good!  These muffins are so moist and yummy and EASY!  I found the recipe here.

Chocolate Chip Muffins

Ingredients:
  • 1 chocolate cake mix box
  • 1 can of pumpkin puree (about 2 cups homemade puree)
  • 1/2 bag of chocolate chips
How To: 
  1. Preheat oven to 350F.
  2. Mix together cake mix and pumpkin.  Beat for 2 minutes on medium speed.
  3. Add in chocolate chips, saving some for later.
  4. Put in a muffin tin with liners.  Batter is dense and does not rise much so these can be filled to the top.
  5. Add the leftover chocolate chips to the tops of the muffins.
  6. Bake for 25 minutes.
  7. Enjoy!!!

Winter Is Here

Winter is here....amd I don't want to be.  We got hit with our 2nd (already) snow storm of the season and I have been sitting at my desk at work watching the weather get worse and worse.  I wish I was at home with my loved ones all cozied up and not having to drive in this.  But here I sit day dreaming of where I really want to be.

But at the end of the day I remember those who are suffering from Hurricane Sandy and am thank ful it's not that bad here.  My heart goes out to them.

Happy Halloween!

It's that time of the year where you're walking around and not sure if that's some weird person or regular person in a costume.  Oh and candy...lots of candy!

We decided to carve a pumpkin this year.  Not only because it's a fun family activity but I want to puree some pumpkin later for baking.  We also roasted the seeds and they were delicious!  Just throw come seasoning salt, cayenne, and olive oil on them and bake for 45 minutes in 300F oven.  Yum!

Instead of the typical jack o'lantern face i've done since I was a kid, we picked out this design with a window and ghost.  Being a wedding decorator, I have plenty of supply of LED lights so we threw in some purple ones and it created a cool eerie glow!
